Chocolate Tempering Process Basics

Filed under: Being Creative, Business Success, Food + Cooking — admin @ 12:27 am

The tempting, luscious appeal of chocolates come direct from tempering, a cycle of heating, cooling and re-warming the chocolate to be able to get its specific temperature.

Crumbly and streaky chocolates are the direct results of leaving out the tempering process in making chocolate candy, a condition called blooming, so most big chocolate makers and chocolatiers take the time to temper. Tempering is equated with fine quality chocolates.

Chocolate tempering needs to be accurate, that’s why it’s considered a tedious task when it’s manually done. A new chocolatier may find it hard to temper chocolate the first time; it’ll probably be hit and miss at first. There’s a lot to learn still before you can fully master the intricacies of tempering.

Tempering is a very crucial process due to the cocoa butter in chocolates. Cocoa butter contains fat crystals that solidify at different specific temperatures. Tempering has one objective: form crystals in one single structure only.

The very first thing you have to learn is that chocolate tempering involves chemistry. The fatty acid that is in the cocoa butter should crystallize and produce as many type V crystals as possible because this is the main reason why best quality chocolates are produced. These fatty acids can crystallize in six different structures.

You also need to familiarize yourself with the proper handling and working with specific temperatures that different chocolates need. Chocolates are very responsive to temperature, causing it to lose its temper quickly. Others use temper meters or calibrated thermometers to guarantee temperature ranges every time.

Manual chocolate tempering can be done in two ways: either by tabliering or seeding. On tabliering, you work on the melted chocolate over a stone slab until it cools down to a particular temperature. With seeding, you have to slowly seed the chocolate must with already-tempered chocolate which works as binders for the loose crystals to form the appropriate crystalline structure.

Both cases need to melt the chocolate until it reaches the right temperature and maintain this temperature while you’re dipping and molding. Though if you’re someone who constantly makes chocolates and produce them in a large volume, you’ll need the help of chocolate tempering machine to be able to consistently produce the same quality confectioneries every time you make them.

Chocolate tempering machines have microprocessors designed to primarily produce the type V crystals essential for the best chocolate features. You can just leave your chocolate in the chocolate tempering machine and not worry about temperatures, since the computer automatically regulates temperature and the process as well. The heating, cooling and reheating process are already automated that you do not have to worry about a single thing.

You can definitely produce in mass when you have the machine, so it only means that more production means more profit.

With the use of the machine, you can now concentrate in your creativity by focusing on how you can further improve your chocolates.

Fat Facts & Common Misconceptions

Filed under: Food + Cooking, Nutrition Hub, World Of Health — admin @ 8:14 pm

Fat is necessary for good health. Our bodies cannot survive without fat. Dietary fats provide your body with energy, promote cell growth, help the body absorb certain nutrients and promote hormone production. A certain amount of body fat is required to keep your body warm and to cushion your body’s organs. A no-fat diet or extremely low-fat diet is dangerous and would soon compromise the healthiest body.

Here some interesting facts pertaining to fat:

Not all fats are alike. There are four categories of dietary fat: saturated fats, monounsaturated fats, polyunsaturated fats, and trans fats. These fat types are differentiated by their chemical and molecular structure, which affects how they are used and processed in the body. The bad fats are trans fats and saturated fats. They are comparatively solid at room temperature (meat fat, butter and lard are examples). The good fats are monounsaturated and polyunsaturated fats, which are comparatively liquid at room temperature (these include vegetable oils). Learn more about good fats and bad fats.

Fats are high in calories. Per gram, fat has 9 calories (this is true of any fat, irrespective of its type). Compare this to carbohydrates and protein, which contain about 4 calories per gram. This tells us that high fat consumption increases the overall calories in our diet. For this reason alone, it is imperative to limit fat intake if your are attempting to lose weight.

Certain fats actually lower chloresterol. The bad fats are bad largely because they lift LDL chloresterol levels (also known as bad chloresterol). Good fats, the monounsaturated and polyunsaturated fats, increase our HDL (good) cholesterol levels, which helps lower LDL chloresterol.

Fat can promote weight loss. The monounsaturated fat found in avocado, almonds, walnuts, canola oil, and olive oil have been found to promote weight loss, attacking the body fat itself. Keep this in mind, you don’t want to eat too many, but be sure to include small amounts of monounsaturated fat from these nuts and oils in your regular diet if you are trying to lose weight.

Fat gives us more energy. Polyunsaturated fats (found in oily fish such as salmon and tuna as well as corn, safflower, and sunflower oils) have a detoxifying effect on our cells, replacing toxic fats deposited there that clog up cell processes.

Fat lubricates the body. Good fats are like oil in a car engine, providing needed lubrication to our joints, digestive system (flax seed is excellent for constipation) and skin. Some of our dermatological problems are caused by deficiencies of good fats in our diet. Learn more about women’s weight loss.

Yummy Japanese Food

Filed under: Food + Cooking — admin @ 7:13 pm

If you are in the mood for a culinary chef-d’oeuvre, then you should visit Takumi. This Melbourne Japanese restaurant is the best of its kind. Not only is the food top notch, but the design of the restaurant creates a relaxing and pleasurable ambience.

Takumi is the only Melbourne Japanese restaurant that serves Wagyu beef. If you don’t know what Wagyu is, it is a premium grade cut of beef. The meat is so tender and juicy it melts in your mouth. You can get this beef cooked in multiple styles. Many people enjoy it as a burger, grilled and marinated with Sukiyaki sauce. Personally, I recommend trying the Wagyu Yakiniku Lunch Set. The beef is served raw and is cooked on a smokeless grill. It is also served with veggies and a complimentary glass of beer or wine. Not only does this taste flavorful, but being able prepare it yourself is an excellent experience.

This Japanese restaurant may specialize in Wagyu beef, but that is not the only Japanese delicacy it has to offer. Frequent lunch visitors also love the bento box. The restaurant offers several options on the main entree for the bento box. A favorite Japanese entree is Gyoza. These pan fried dumplings are exceedingly good and addictive. You cannot stop at one. If you are a seafood fan, give the Unagi bento Box a try. Unagi is smoked grilled eel and is a very popular and delicious Japanese restaurant dish.

The decor of the restaurant offers a very zen-like feeling. You will feel right at home when dining here. The sleek and comfortable high back chairs and subtle decorations have a calming affect and allows you to feel like you are having a quiet meal at home, even though you are in the presence with other people.

Overall, Takumi is a tremendous Japanese restaurant. From their delicious menu offerings, to the many different Saki choices, this Melbourne Japanese restaurant is number one in my book.

Mint-Chocolate Coffee Spoons

Filed under: Food + Cooking — admin @ 3:05 am

Mint-Chocolate Coffee Spoons
(A quick and easy way to enjoy mint-chocolate coffee!)

My sister-in-law makes these, and they sell them at school events to raise money for the parochial school where her son is enrolled. She says they “sell like hotcakes.” Suggested price: 2 for $1. If you want to make gifts for people for birthdays or Christmas or other special occasions, or as party favors, the coffee spoons work well for that too.

• Ordinary plastic spoons

• Bars of Hershey’s chocolate

• Hard peppermint candy or, for something different, try dinner mints

• Saran Wrap or other plastic wrap

• Short pieces of ribbon

Melt the chocolate. Dip the plastic spoons in the chocolate. Lay spoons on wax paper. Before the
chocolate sets, place a mint in the middle of the spoon.

When the chocolate has cooled and hardened, cover spoon with Saran Wrap (or other plastic wrap). Tie a ribbon around handle of the spoon to hold the plastic wrap in place. (Use colored plastic wrap and coordinating colors for the ribbon, if you prefer.)

To use: pour a cup of hot coffee, take the plastic wrap off the spoon, stick the spoon in the coffee and stir. And TA-DA! — mint chocolate coffee.

Note: You might want to add some chocolate chips to the melted chocolate to give it a somewhat
firmer consistency when it cools off. You may also want to experiment a bit with dipping the spoons a couple of times.

Another note: you could also experiment with other flavors. What about vanilla almond bark and
butterscotch candy? Or chocolate and butterscotch? Or chocolate and raspberry candy? You get the picture, I’m sure.

Atkins Diet Plan - What’s The Catch

Filed under: Food + Cooking — admin @ 3:02 pm

The Atkins diet Plan breakfast can usually composed of eggs strips of bacon and coffee. A snack might include coffee with cream, and chunks of cheese. A huge steak fried in butter could be dinner. Doesn’t this sound really good? It seems very tempting but there is a catch.

In the beginning you will have to give up most carbs, such as breads, potatoes, pasta, rice and other things like chocolate, cake, some fruits. In theory, when carbs are eliminated from the diet, the body burns stored fat. Weight loss is quicker because fat burns more calories than carbs.

Stable blood sugar levels help you to feel fuller thereby damping your appetite. The Induction is the first phase of the Atkins diet, which you follow for at least two weeks. Only 20 grams of carbs a day, but you can eat lots of red meat, chicken, fish, eggs cream and butter. That you want.

During this phase, your body learns to burn fat and not carbs. The ongoing weight loss phase is the second stage. Add 5 grams of carbs a day until you get to your critical carbohydrate level for losing weight. How many carbs can YOU eat and still lose between 1 and 3 pounds a week? Bread, pasta rice and potatoes are still taboo.

The pre-maintenance or third phase is started when you have only 5-10 pounds left to lose in order to reach your goal weight. Yes! Now you get to add 10 grams a day for one week, to your carb intake, to help your body adjust to the addition of carbs to your diet, and to the final phase of the diet.

Lifetime maintenance, phase 4, teaches you ways to stay motivated. Your carb intake is limited to 90 grams in a day. You will be eating low carbs for the rest of your life. Some doctors have expressed concern about the long tern effects of the Atkins and other low carb plans.

High saturated fat consumption may cause an increased risk of heart disease. The lack of certain nutrients in this diet could cause future health problems. The limited intake of calcium could possibly put you at risk for Osteoporosis. The low antioxidant nutrients could lead to cancer, heart disease and premature aging.

The Atkins diet is boring in the Induction phase. Vegetarians have a hard time with Atkins, particularly in the early stages, due to the limited amount of vegetables, nuts seeds and beans. The Atkins diet presents an image of good health from a proper diet. Some are concerned that once you go off the diet the weight comes back quickly.

The very low carbs in this diet could cause ketosis which can be dangerous for diabetics. The high cholesterol of this diet may cause constipation and heart disease because of the high fat content. This diet, low in fruits and veggies is consequently low in antioxidants that fight cancer. The Atkins plan is that it’s not intended for long term use and has serious side effects.

The Atkins Plan works, it is that simple. Weight loss is rapid and you can eat as much protein and fat, as you would like. The carbs eliminated by the Atkins diet can cause a loss of antioxidants which are known to prevent some cancers.

This high fat, high protein diet can increase the risk of elevated cholesterol and heart disease. This Diet really works, although some believe you can’t stay on it long term. If you go off the diet or cheat , you will begin to re-gain the weight. Once you start eating a more normal diet the initial weight loss will return.

As with any diet check with a physician-to make sure you are healthy to begin with. The Atkins diet, some believe, is not for long term use and that it poses some serous health risks. If you are overweight, you are already at risk for heart disease and other health problems, and Atkins could increase those risks.
